Honey Ginger Chicken



2 Tbsp. vegetable oil
2 Tbsp. butter

1/3 cup flour
1/2 teaspoon ground ginger
1/4 teaspoon pepper

3 lbs. chicken (drumstick, thighs or breast)
1/3 cup honey
1/3 cup chili sauce
1/2 cup soy sauce
1/2 teaspoon ground ginger
(if you don't have chili sauce use 1 can tomato sauce and 1/3 cup brown sugar)

Heat oven to 425 degrees. Melt oil and butter in 9 x 13 pan. Mix flour, 1/2 teaspoon ground ginger and pepper. Coat chicken in flour and place in pan. Bake uncovered for 30 minutes. Turn chicken and bake for 15 minutes. Remove chicken, drain fat, line pan with foil. Return chicken to pan.

Mix remaining ingredients and pour over chicken. Bake 15 minutes, spooning mix over the chicken every 5 minutes.
