Recipe: Mexican Casserole


3/4 lbs. chicken
1 pack taco seasoning
1 can black beans
1 1/2 cups crushed tortilla chips
1 can corn, drained
1/4 cup salsa
1 cup shredded Mexican style cheese

Optional- add black olives or green chilies.

In large skillet saute chicken until cooked. Add taco seasoning, beans, corn, salsa and a little water to prevent drying out. Cover and simmer for 10 minutes.

Preheat over to 350
Transfer chicken mix to 9 x 13 pan, top with 1/2 cup cheese and tortilla chips.
Bake for 15 minutes, add remaining cheese and bake until melted.
